Due to constant vigorous swimming, the flesh of Mt. Cook Alpine Salmon is firm, flexible and moist. The delicate taste makes it highly sought after by five star hotels and restaurants, particularly for sushi and sashimi. It is prized by top chefs for its consistent high quality and wonderful rich flavour.
Mt. Cook Alpine Salmon are extremely attractive with a brilliant silver colouration to the skin and scales, and rich orange-red flesh. Alpine salmon has less marbling in the flesh than ocean reared salmon. Salmon are sold whole with gills and guts removed or as fillets, steaks and sashimi. Hot smoked and cold smoked products are also available.
Our fish are not treated with vaccines, pesticides or antibiotics at any stage of the life cycle. They are naturally healthy due to living in pristine, highly oxygenated water and getting plenty of exercise.

Mt. Cook Alpine Salmon live in the swift cold currents of a snow fed alpine canal, in the South Island of New Zealand. Constant swimming against the water flow means they develop firm flesh with high levels of Omega 3 and less inter-muscular fat than ocean-reared salmon. It is said that Mt. Cook Alpine Salmon are amongst the healthiest salmon in the world.
